Is everyone making this? I have NEVER ate corned beef, but Imma give it a whirl. ANY awesome recipes...yes I will google as well :)

We are having a potluck at work and my friend is making it. I have never had it before. I am in charge of cupcakes and fruit dip.

I've made it the past few years for St. Patrick's Day. A different kind of pot roast; it's pretty good! I normally just follow the recipe on the packaging but this year I'll follow this one...
Corned Beef and Cabbage

It's got great reviews so I figure it can't be that bad. Plus it's not too different from the regular recipe I use.

TIP: Make sure not to use the entire packet of seasoning included with the beef. It's incredibly salty! I use about half.

The packet that comes along with the corned beef is pickling spice & that doesn't have any salt in it.

The Corned Beef is what's salty, corned beef is beef brisket brined. The brining solution is a salt water solution with spices.

i go an hr./ per. lb.at a very low simmer and put the veggies( cabbage, carrots, red potatoes) in the last 40 min. very basic..i'm sure AB has a better one..lol

Another easy idea for those who aren't huge fans of the typical corned beef and cabbage...make some Rubens! That's the plan at my house!

4 lb Corned Beef (w/pickling packet)
1 Large Sweet Vidalia Onion
1 Tbsp Whole Peppercorn
1 Tbsp Coriander Seed
1 Tbsp Allspice Berries
1 Tbsp Yellow Mustard Seed
1 Bay Leaf
1 Bottle Hard Cider Apple(Wyder's,Hornsby's or Woodchuck brand)
12 Red Potatoes, cut in half
1 lb bag Baby Carrots
1 small head Cabbage


Put the first 8 ingredients into a large stock pot & add enough water to cover the corned beef by 4". Cook for 4.5 hours. Remove the meat & set aside till it's cooled off enough to slice.

In the meantime I add the Red potatoes & carrots into the stockpot & cook for 20 minutes, I add my cabbage & cook for an additional 20 minutes (I don't like my cabbage overcooked).

Serve it with a piece of french bread to sop up all the yummy soup stock.

Note: I remove the veggies after it's done cooking so if you have any leftovers, it will taste just as good on the reheat.

I'm also making mine tomorrow, but only cause Hubby requested it for Friday so he could partake in a few Irish Car Bombs for the evening too :)

:/ Can't wait till tomorrow so I can enjoy some Corned Beef & Cabbage too.

In the meantime, I'll just have another Bruised Pear a.k.a. Snakebite (Hard Pear Cider & Guinness)
