for some reason i feel like i just posted this a couple weeks ago, but here ya go. http://allrecipes.com/Recipe/Moms-Chili/Detail.aspx 1 pound ground beef 1 large onion, chopped 1 (15 ounce) can ranch-style beans 1 (10 ounce) can diced tomatoes with green chile peppers 1 (1.25 ounce) package chili seasoning mix salt and pepper to taste 2 teaspoons chili powder, or to taste 1 cup water, or as needed ..DIRECTIONS 1.In a large saucepan over medium-high heat, cook beef and onion until meat is brown. Stir in beans, diced tomatoes, chili seasoning, salt, pepper, chili powder and water. Reduce heat and simmer 2 hours. **i also add kidney beans, i did 1.5 tablespoons of chili powder. i used beans with jalapenos in them also.

Well I always use stew meat or cut up sirloin ...maybe some steaks of some sort if I have them around. Sometimes bacon crumbled up if I have it. Always kidney and pinto beans ...sometimes black as well. Always red onion. Lots of fresh tomatoes from the get go so they can cook down. Almost always red, orange and yellow bell peppers .....as far as spices, I use a couple of packages of chili mix and then usually some more chili like New Mexican ground or whatever I have on hand. I do mine in the crock pot. The more fresh ingredients the richer the flavor. I always cook AT LEAST a double batch if not more. It goes fast in my house for the first meal and leftovers. It is late right now and I'm tired but that is definitely a good start above.

This is how I make my chili. One big can/bottle of tomato juice 1 lb of ground beef 1/2 large onion or 1 medium onion 1 smaller green pepper 1 can dark kidney beans 1 can fire rosted tomatoes table spoon of tomato paste salt, pepper and chili powder to taste. ( I usually put about 3-4 shakes of salt, 4-6 shakes of pepper and the same with chili powder maybe even more) couple shakes of tobasco sauce. Brown your beef, once brown add to pot, stir in tomato juice, onions, green pepper, kidney beans(drained), fire roasted tomatoes, tomato paste and salt, pepper, chili powder and tobasco sauce. Bring to boil, once to boil turn the heat to low, cover and let simmer for at least 3 hrs. =] Hopefully you like it! I would say it feeds about 4 people, so if you need more you can always double it!

cut up sirloin yup this is better!!! That's what my husband says. I've done it the same way before except with chicken/turkey and it is still good. I just like the big chunks of meat the best. Lamb meat is good too if you can get a good price on it.
